Along the vertical axis is how the game interprets your input. Along the horizontal axis we have your physical joystick's sensitivity. The graph on the left shows a linear sensitivity line. It's easier to show than explain, so here's a diagram. Basically it makes your sensitivity a curved shape rather than a straight line. This allows for better aiming and maneuvering in fighter planes. TLDR - A curve allows you to make more precise adjustments when moving your stick softly, while allowing you to retain full control of your control surfaces.
